I created this one just in time for the holidays. This is scrumptious! It's a bit like Pumpkin Pie, but lighter. Enjoy!

Egg Nog Pie


1 pkg (3.4 oz) Instant French Vanilla Pudding
Cool Whip (8 oz. pkg.) (the French Vanilla version makes it even better!)
2 cups cold Egg Nog
Graham Cracker pie crust
Cinnamon, nutmeg or allspice

Make pudding with 2 cups of eggnog instead of regular milk. Add 1/2 of Cool Whip package to pudding mixture. Add in some cinnamon, nutmeg, allspice or pumpkin pie spice to taste (any of these work well). Stir, then pour mixture into pie shell. Cool in refrigerator for at least 2 hours. Top with remaining cool whip topping. Sprinkle topping with cinnamon.

Serves 8

Maple Walnut Cake
I created this one for my Mom who loves Maple Walnut ice cream. This is hard to find, so I made a cake with her favorite flavors!

1 yellow cake mix
1 tsp. maple flavoring
1/2 cup crushed walnuts
1 tsp. cinnamon
Cream cheese frosting

Follow directions on the box to make the yellow cake, only add in a teaspoon of maple flavoring and a teaspoon of cinnamon. Mix and bake. When cooled frost with cream cheese frosting and top with crushed walnuts.

Tip:  To crush walnuts that are whole use a can of vegetables or a rolling pin. Put the walnuts in a zip lock bag and roll the can or pin over the bag until the walnuts are crushed to your liking. Very easy! Get the kids to help! They love that part of baking!

Having transplanted from a Northern Yankee to a Southern Gal I had to try frying something I don't normally fry. I was surprised how good they came out. The kids liked them, so I had to share with all of you too! The measurements might be a little off. I just go by sight when I make something up! So I did my best guessing!

Fried Apples
1 cup flour
1/2 cup brown sugar
1 tsp. cinnamon
3 cups of cut up, peeled apple slices (about 4-5 apples)
Water
Vegetable oil (enough to deep fry apples in pan or fryer)
Optional: Caramel dip or sauce (you can find near apples at Wal-Mart or near ice cream section of stores).


Use a deep fat fryer or a deep frying pan with oil in it to fry these. Get it hot! Mix flour, brown sugar, and cinnamon in a bowl. Peel apples and cut into thick slices. Put slices in a bowl of water. Next, like an assembly line move the wet slices to the flour mixture. Cover apples with batter well then fry in hot oil. Apples are done when golden brown.

When they are finished place on plate covered with paper towels. Let cool, then garnish with cinnamon-sugar or dip into caramel sauce.







Pumpkin Banana Muffins
It's like a cross between pumpkin muffins, banana bread and spice cake. This recipe is doubled and makes 12 very large breakfast type muffins. Enjoy!

4 eggs
1 can (about 16 oz) of pumpkin
1 cup granulated sugar
1/2 cup brown sugar
1 cup oil
1 mashed banana
2 tsp cinnamon
2 tsp vanilla
1 tsp baking soda
2 tsps baking powder
2 cups flour*
1 cup chopped pecans
Cream cheese frosting for topping

*If using self-rising flour, omit baking powder.

Preheat oven to 350 degrees. Save 1/2 cup pecans for topping with frosting. Mix the rest of the ingredients together. Fill large greased muffin tins. Tip: Use butter spray to grease tins! Easy!

Bake at 350 for 25 minutes.


Place muffins on plates to cool. Should come out of tins easily. Then frost with cream cheese frosting. Top with remaining chopped pecans. Enjoy with a hot cup of coffee or tea!
